thanksgiving at the molina's


3 weeks later, thanksgiving is a total blur. i do remember having a lot of fun and enjoying hosting my family. i also remember making these spinach balls shared to me by a friend. they were easy to make and freaking good....so in case you need a christmas app, this is a good one!
spinach balls

2 10 oz pkgs frozen chopped spinach
3 c herbed stuffing mix
6 eggs, well beaten
3/4 c melted butter
1/2 c parmesan cheese
1 tsp pepper
1 1/2 tsp garlic salt
Cook, drain, cool and squeeze spinach. Combine all ingredients. Shape into small balls. Bake on greased cookie sheet at 325 degrees for 15-20 minutes. (You can freeze the balls ahead of time but be sure to thaw completely and then bake for 20-25 minutes.)
