this sounds very good but lots of prepping, however julie (a non-cooker) assures me it is not time consuming! we'll see....
3-4 boneless/skinless chicken breasts
Teriyaki Chicken Marinade:
½ C soy sauce
½ C dry white wine
2 T. sugar
1/4 C packed brown sugar
1 t. finely grated ginger root or 1/4 t. ground ginger
1 or 2 garlic cloves (minced)
1 t. vegetable oil
Mix all ingredients - pour over chicken breast. Cover and chill overnight.
Chicken may grilled or baked.
Salad:
1/4 C unsalted butter
1 C walnuts (chopped)
1 package ramen noodles, uncooked and broken up (discard seasoning packet)
1 head Romaine lettuce, washed, dried and broken into bite size pieces
1 bunch broccoli (chopped)
5 - 6 green onions (chopped)
teriyaki chicken
In a small saucepan, melt butter and brown walnuts and ramen - drain on paper towel. Put the lettuce in a large salad bowl; add the noodles, walnuts, broccoli, onions & chicken. Pour sweet & sour dressing over salad to coat all ingredients and toss well. (You will have dressing left over)
Sweet & Sour Dressing:
1 C vegetable oil
½ C sugar
½ C wine vinegar
1 T. soy sauce
salt & pepper to taste
To prepare dressing, blend & shake above ingredients.
Serves 10.
